Quick and Easy Roasted gingered Yams.

This is a recipe I created the other day and liked a lot.  It is quick, easy, and tasty!

Ingredients:

1 medium yam (not a sweet potato, a yam), olive oil, large pinch of dried ginger powder, salt to taste.

Method:

1) Cut yam in half then cut each half into half moon shapes about a quarter inch thick.

2) Microwave on high for one and a half minutes.

3) Roast 5 minute in an oiled pan big enough to fit all the yam pieces while maintaining contact with the floor of the pan. 

4) Sprinkle on ginger and salt and mix around the yams until they are all evenly covered.

5) Roast until browned.

6) Enjoy!  I ate mine with some morning star chik’n tenders and sambal.
