Catching Elephant is a theme by Andy Taylor
Ingredients
-5 ears of corn, cooked
-2 16oz cans of black beans
-5-7 hot peppers, diced
-1 1/2 red onions, diced
-1 lime
-salt, Adobo seasoning, chili power, and cilantro to taste
Instructions
-Cook corn by boiling in large pot for 15-20 minutes, covered. Remove for pot with tongs and let cool. When cool, cut off kernels and put them into a large mixing bowl.
-Strain and rise beans. Mix in with corn.
-Mix diced hot peppers and red onion in. Squeeze lime juice from lime and mix.
-Add seasonings as desired and mix.
-Cover and refrigerate for at least an hour to allow flavors to blend.
-Enjoy chilled with chips or on a burrito, taco, etc.
