Shayla's Baked Ziti
Every Christmas I make a baked ziti that further pushes my family’s limits. Mind you, they are new to vegetables so something like this results in crinkled noses and resistance. So here’s what I made this year and it turned out amazing.
For a small ziti (serves 6):

Carrot Ginger Soup
Every time I go to the store, I pick up a bag of carrots. The thing is, as much as we like carrots in this house, we definitely don’t go through a bag every week. Therefore, I had up to four bags of delicious bunny food in my food crisper. So, what do you do when you have too much of a good thing? Make soup out of it.
